Quarantine Cooking: Spice Crusted Pork Loin
You guys, I'm basically a food blogger now. I mean, I previously baked cookies and now a pork loin.
Full disclosure, I've made this spice-crusted pork loin a few times before. It's not my recipe, it's actually from WW. It's so good!
It was Easter weekend and I know ham is usually the go-to, but a pork loin is from the same animal, so close enough.
Then, I decided to roast some potatoes too. I figured if I'm heating up my whole apartment by turning the oven on, I might as well make it a party!
Also, I should probably note that the spice rub called for oregano, but I was out, so I used dried sweet basil.
I have also come to the conclusion that my oven does not heat to the correct temperature. I had to cook the pork loin longer than the recipe called for. It still came out great and more importantly, tastes delicious!
