Since I've been on this journey something happened that I didn't expect to happen. I love spinach! If you would have told 10 year-old me that one day I would not only eat spinach nearly everyday, but that I'd love it, I wouldn't believe you. Then 10 year-old me would ask about the time-travel technology that you used to travel to western Nebraska in the mid-80s to ask such a weird question. My time travel obsession was formed early. Then I'd probably want to talk about Dr. Demento. I suppose you would have the same conversation with 30 year-old me too. And again, Dr. Demento.

Anyways, I can't believe how much I like spinach. It's got more flavor than lettuce, better texture than kale, and goes with anything. When we grill hamburgers at home, my patty and cheese go on a bed of spinach. When it's salmon, again on a bed of spinach. Taco salad? You guessed it spinach. And when I'm in a time crunch and know that I need my veggies, a spinach smoothie is the way to go. Not only do I get to look like a crazy movie scientist by drinking something that's green, with a Profile meal replacement or a dab of Profile Powdered Peanut Butter, the spinach taste takes a nice backseat. Even just a bowl of baby spinach and salsa is a lunch that I look forward to.

When I noticed that I was going through one of those huge warehouse store clam-shell, plastic box things of spinach in week, it hit me. I must love spinach.

It was a little bit of surprise to me, considering that my go to food in a pre-Profile life was often bread and/or sugar based. But, I kind-of like it. And judging by how my body reacts, it like it too.  Just another aspect of my life that has been impacted, and improved, by Profile.
